Two chapels among the vines, a lake with a bridge and twenty rooms upstairs, an hour from Melbourne
Immerse is a family-run winery, restaurant and wedding venue on the Melba Highway at Dixons Creek in the Yarra Valley, about an hour from Melbourne. The family has run it for more than 20 years and the restaurant has been in The Age Good Food Guide since 2008. There are two ceremony spaces: a chapel with a stone floor and a floor-to-ceiling window onto the vines, and a covered Garden Chapel beside the lake and rose garden. Twenty rooms sit on site.
We have photographed and filmed weddings at Immerse since 2020, plus an engagement session and a wedding album. The reception room mixes timber, stone and black iron, and it faces the vineyard. Between the chapel and the reception there is a lake with a bridge, a gazebo swing and the gardens, so portraits happen within a few hundred metres of the aisle and guests drift to the deck for drinks.

Phones can distract from the emotion (and your photos). Asking guests to be fully present makes for cleaner frames and a more heartfelt atmosphere.
Clutter-free rooms with natural light are a photographer's dream, and calm energy in the morning sets the tone for the day. Keep the space tidy — or assign a friend to do a quick sweep before we arrive.

The vines start a few steps from the chapel door, so the couple walk goes straight out into the rows. The bridge over the lake is the go-to for a quiet frame while guests are at cocktail hour. In winter the main chapel keeps everyone dry and the big window still puts the vineyard behind the vows. Golden hour is worth leaving the reception for ten minutes: the low sun rakes across the vines and the hills go blue.
